I’m having trouble giving my characters their personality

I don’t know how to explain it but I have characters that don’t have a completely personality, as in I could describe their current personality in 3 words. And now I want to finalize their personality but I find it hard since the end result just doesn’t feel satisfying or in character.

I try to set up fake conversations to get an idea of what I want but I’m still having trouble even with that
