How do I accomodate my vegan partner as a non-vegan?

Hello, my gf w/25 and I w/24 live together for more than a year now and I feel like her resentment towards me grows bigger. I personally would love to live as a vegan, but my digestive system and apetite can‘t digest vegetables as good as it should and my doctors even recommended me to eat meat. I don‘t eat meat, I occasionally eat eggs to increase my protein intake. Plus, I have this habit of eating the same grilled cheese (orange salty melty single plastic packaged cheese with toast) for the past decade or longer.

Are there any good alternatives to „salty melty single packaged plastic cheese“(yk what I mean) and eggs? Not too processed. I like runny eggs with salt.

I feel like my gf doesn‘t like me eating eggs or cheese and I don‘t know how to accomodate her needs better.

Are there any other tips to help her feel more validated in her dietary choice?

Note: I have IBD inflammatory bowel disease and polyps. If I keep eating high-histamine and „challenging“ foods like Cellulose, starch etc. I‘d eventually get cancer. I do believe in veganism and all that!! I really do think it‘s better not to exploit animals and doing smth good for the environment.

Edit: We‘re going to adopt a dog soon which is supposed to be fed vegan food entirely. We looked it up and it seemed possible. Any recommendation for feeding your dog vegan?
