How do you find an employer that takes pride in their work

I'm looking to start as an apprentice later in life (something I'm finding more difficult than I expected. You'd think it would be easy to find someone willing to pay you half the minimum wage, but that's another topic).

My question is, what can I ask an employer to get an idea of wether they are the kind of professional that I want to work for?

I want to work for someone who cares about their staff, their customers, and their trade.
