Tips for staying out late?

So I’ve done a few sober dinners and learned some good tricks for that (early reservation, mocktails, coffee with desert etc) but I’m generally heading home by about 9pm.

Which is fine, but I’m really craving a bit of a later night! The kind where dinner moves on to dancing.

I just can’t imagine getting past the tiredness I usually feel after dinner. Does anyone have any sober tips for lasting a little longer?
