For those who eat moderate carbs (100-150g), how are your spikes

I try to eat at least 100 grams carbs per day but stay below 120 grams. Usually eat multi-grain bread and quinoa

I stay below 140 mg/dl for most of the meals but easily spike to 130s from baseline in 80s (so spike of 40/50 mg/dl per meal). Glucose comes back to baseline in 2 hours if I do some kind of walk/workout and 3 hours if I'm sedentary.

Are these spikes too high? They are under 140 but the spikes seem steep. For those who do similar carbish meals, how do your spikes look like ?
