First full mouth case

I have a a patient who is interested in having his full dentition rehabilitated. This will be my first case. All teeth are present, with the exception of thirds. He has both severe erosion and attrition. I have advised the patient to see an MD for possible diagnosis/treatment of acid reflux before we start. I’m seeking tips from those with experience in similar cases—especially things you wish you’d known or done differently when tackling your first full-mouth rehab. I will be working with a mentor on this case to ensure things go as smoothly as possible.

I am considering crowning the premolars/molars, and doing injection molding and veneers for all remaining upper/lower anteriors to preserve as much enamel as possible. Wondering if this is too ambitious for a first case? Also, how are you determining how much of the bite to open?
