Work soup potluck. Give me your favorites.

I started a new job that I really like in December. Today they announced that we are having a soup potluck end of February.

I love making soup, and have too many good recipes. I'm scrolling through my recipes and overwhelmed.

The sign up sheet had a list of basics - potato, chicken, veg, chili, etc, and then a section to sign up for "other."

I want to sign up for the "other" category.

If you were in my position, and wanted to bring something different from the standards, what would you make?
