Not losing weight - Am I doing something wrong?

Hi friends. My gym has been doing a nutrition challenge that started at the beginning of the new year. We’re on week 4 now today and I haven’t lost a pound since the 1st week. Started at 247, F, 5’8”. Have PCOS. I’m 238 right now and it all came off in the first week or so. I’ve been going up and down from 239-236 for the last 3 weeks including today. Haven’t had a drop of booze since NYE. Logging everything I eat religiously every single days eating under 1600 calories. I work out doing strict weight training M-W-F. 4 mile hike on Thursday’s. CrossFit class on Tuesday’s. And do some kind of outdoor activity Saturday. Sunday is my rest day. Eating 140-160g of protein. 50-60 carbs. 80g of fat. Hitting those almost daily sometimes under. I also hit 9k-10k steps plus daily.

I just don’t get it. It’s so frustrating knowing I could probably be eating what ever the hell I want and drinking and weight what I do now. I’ve been doing this text book.

Update / edit: forgot to mention in 34, and yes I have a food scale that I weigh everything also photograph my meals. Burning on average 3200-3400 calories a day

Update #2! Definitely think it was hormones - I had. A whoosh and dropped 5 lbs as of this morning!
